Inez Cook is co-founder and owner of the award-winning Indigenous Salmon n’ Bannock Bistro restaurant, which has been featured in National Geographic, the Guardian and the New York Times. Cook is a member of the Nuxalk Nation and the author of the children’s book Sixties Scoop. She has worked in the travel industry for 31 years.
